Taking Proud to be a Chef Beyond Melbourne
Fonterra’s Proud to be a Chef program helps apprentice chefs build their skills through education, mentoring and industry experience.
Dream Engine partnered with James Phillip Design to stream a series of cooking demonstrations from Fonterra’s head office in Richmond. Leading Melbourne chefs demonstrated recipes, shared techniques and spoke about their experience with participants joining online from across Australia.
The challenge
Showing Every Step Live
Cooking demonstrations move quickly. Chefs work across the kitchen, several dishes may be underway at once, and viewers need to see both the presenter and the detail of each technique.
Because the sessions were live, there was no edit to fix a missed angle or unclear sound. Every camera choice, transition and audio source had to be managed as the demonstration happened.
The action
Three Cameras for the Chef, Kitchen and Detail
We designed a three-camera production around the demonstrations.
A wide shot established the kitchen while the other cameras followed the chefs and captured close views of ingredients, techniques and finished dishes. Our team switched between those angles live as the chefs moved through each recipe.
Professional audio kept the presenters clear in the busy kitchen, and the complete production streamed through BigMarker. See more about our live streaming services.

Keeping the Technical Work Out of the Kitchen Team’s Way
Dream Engine managed the cameras, live switching, audio and stream while working alongside James Phillip Design.
That left the chefs free to present naturally, answer participants and focus on the demonstrations.
The result
Apprentice Chefs Could Join From Across Australia
The live broadcasts gave apprentice chefs access to leading Melbourne chefs without requiring them to travel to Melbourne.
Participants could follow each demonstration in real time, see the detail of the techniques and engage with the presenters during the sessions.
